Mae Awen Trading Cyfyngedig yn is-gwmni masnachu Ymddiriedolaeth Ddiwylliannol Awen, elusen gofrestredig ym Mhen-y-bont ar Ogwr, De Cymru. Nod Awen Trading Cyfyngedig yw datblygu grŵp o fusnesau sy'n gymdeithasol gyfrifol sy'n cystadlu'n fasnachol, rhagori ar ddisgwyliadau cwsmeriaid a chreu elw iach y gellir ei roi yn ei dro yn ôl i'r elusen rhiant fel rhodd cymorth. Awen Cultural Trust is a registered charity based in Bridgend, South Wales. Our purpose

is to make people’s lives better, which we achieve by delivering inspirational cultural events, activities and programmes. Awen engages with over one million visitors a year through a diverse range of facilities and services which include theatres, libraries, community centres, historic house and country park, and two work-based projects for adults with learning and physical disabilities. Awen’s work has significant impact on local economies, individual wellbeing and community cohesion.

Awen Trading Limited

Awen Trading Limited is the wholly owned trading subsidiary of Awen Cultural Trust, a registered charity based in Bridgend, South Wales. Awen Trading Limited’s aim is to develop a group of socially responsible businesses that compete commercially, exceed customer expectations and generate healthy profits which, in turn, are gifted aided back to the parent charity. Currently, these businesses include the Caffi Bar at the Grand Pavilion in Porthcawl and Bryngarw House, an exclusive wedding venue based in the grounds of Bryngarw Country Park.

Position

As an experienced Sous Chef, you will play an integral role at our signature wedding venue, Bryngarw House. Working with the Head Chef, you will manage the kitchen team and ensure a successful dining experience for all guests. Your passion for culinary excellence and a desire to learn and develop your skills will help to ensure that Bryngarw House maintains its reputation as a leading wedding venue in South Wales and beyond.

General Responsibilities

· Responsible for working closely with the Head Chef to prepare and deliver set wedding menus for up to circa 120 guests.

· Produce high quality dishes that follow the agreed menu at required standards, as well as to clients’ meeting client expectations.

· Maintain order and discipline in the kitchen at all times.

· Provide advice and guidance to other staff as and when required to ensure functions are run to set times.

· Make sure that the professional equipment is in good condition and signal any malfunction before it affects the staff or services provided.

· Leading the kitchen team in the absence of the Head Chef.

Food Safety, Health & Safety and Wellbeing

· Maintaining the highest standards of food and personal hygiene at all times.

· Make sure the hygiene and food safety standards are met in all stages of food preparation, starting with the ingredients and ending with the finished dish which leaves the kitchen door

· Ensuring the kitchen team has and maintains the highest culinary standards at all times.

· Reporting any accidents or near misses.

· Applying high levels of hygiene, sanitation and safety at all times.

· You will ensure that you adhere to our dress code and the correct uniform and ensure that your team are compliant at all times.

· Ensuring that all company and client policies and procedures, site rules and statutory regulations relating to Food Safety, Health & Safety, safe working practices, hygiene, cleanliness, fire and COSHH are adhered to.

· You will be aware of all Fire and Emergency Evacuation Procedures and ensure that normal precautions are taken by team members to protect against fire and safety hazards.

Qualifications and Training

  • Level 2 Food Hygiene Qualification

Knowledge and Experience

  • Proven experience of catering in a similar environment.
  • Experience of leading a team to achieve high standards of service and set standards.
  • Experience of managing all administrative responsibilities in relation to food and beverage operation, including scheduling, communications, budgeting, selling procedures, client relations and billing.
  • Practical knowledge and experience of complying with relevant legislation and industry best practice.

Other information

Job Title: Sous Chef

Basis: Permanent (2080 hours annualised)

Working Hours: Typically, 40 hours per week dependant on business needs (Evening, weekend and Bank Holiday working will be required)

Salary: £22,000- £25,000 per annum depending on experience

Base: Bryngarw House, Brynmenyn

Accountable to: Head Chef
